It’s not often a high-brow literary quote becomes the basis of the name of a new boutique salad bar.

‘Salad days’ is a beautiful turn of phrase, coined by William Shakespeare and spoken by Cleopatra in Act 1, Scene 4 of Antony and Cleopatra, about her carefree days of idealism.

And it is the name of a new Salad Bar at 14 Bayswater Road, Potts Point, opposite Coles Supermarket, owned and run by Priscilla and her brother Louie, a local resident.

They only sell salads, either at sit-down tables al fresco, or take-away. They are fulfilling a niche market for purely healthy food.

And it’s no coincidence they are within 40 metres of three large popular gyms. The outlet has been full with every seat taken since the day it opened, only a few weeks ago.

There is a plethora of choices with six bases, eight main salads, 25 toppings, seven dressings and 11 premium toppings.

The most popular dish is the “Killer Caesar” salad. So far, there have been no ambulance call outs!

Priscilla says her passion for food is part of her heritage as she comes from a family of excellent cooks.

Her enthusiastic staff continue the verve for their craft.
